Mine would be Paradise Kiss, Mars, Loveless, and Chobits. :)
And once I can find the Ergo Proxy manga, I'll love that as well, since I'm a fan of the anime.

From the list above, I take it we're including individual issues that have collected into graphic novels then? In that case:
-The Sandman: A Game of You
-The Sandman: Brief Lives
-Death: The High Cost of Living
-The Books of Magic (first mini-series trade--read this and tell me that Harry Potter isn't a rip off of Neil Gaiman's story)
-Batman: Knightfall
-Starman: Sons of the Father
-Green Arrow: The Longbow Hunters
As for straight up graphic novels:
-Batman: Holy Terror
-Batman: Gotham by Gaslight
-Green Lantern: Ganthet's Tale
