Srofezilla, good point!
How are you considering three times. Are you counting "Dark Empire," "Jawas of Doom," "Tales of the Bounty Hunters," "Tales from Jabba's Palace," and "The Mandalorian Armor?"
There's a good breakdown at http://scifi.stackexchange.com/questions/50775/which-book-explains-the-story-about-how-boba-fett-escapes-his-fate of four of those five.
Also, be sure to check out the Fettpedia record, now updated for the Sarlacc:

To say that Boba Fett's "death" in Return of the Jedi is lame is an understatement. The scream that he lets out is even worse. It seems as though george mucus never really cared that much for Boba Fett but he loves jar jar binks. That's the problem I have with george!
